  1. Primero de todo hacer el caldo y cocinar las pechugas. Para ello, en una cazuela poner agua y las pechugas junto una cebolla, ajo, el laurel, un chorrito de aceite y la pastilla de caldo.
    Dejar hirviendo unos 20 minutos. Sacar del fuego, colar el caldo y reservar las pechugas.
  2. En una cazuela poner 200 del caldo junto a dos cdas de mantequilla. Cuando empiece a hervir ir añadiendo la harina y remover al mismo tiempo para que se vaya integrando.
    Cuando se haya hecho una masa consistente, sacar del fuego y reservar en un bol grande para que enfríe.
  3. Para hacer el relleno primero ir cortando la carne en tiras o hebras (yo lo hice con la mano que es más cómodo).
    En una sartén poner la cebolla y el pimiento verde bien picadito. Dejar pochar y a continuación agregar el pollo.
    Agregar el tomate frito y el queso rallado y remover bien. Salpimentar al gusto.
    Sacar del fuego y reservar en un bol hasta que enfríe.
  4. Para hacer las coxinhas coger un poco de masa, hacer una bola y meter el pulgar. A partir de ahí ir haciendo como un cuenco, rellenar con el pollo y cerrar por arriba. Dar forma de muslito o higo.
  5. Pasar las coxinhas por leche y después por pan rallado y freírlas en abundante aceite caliente hasta ver que están doradas.
